Get tropical with this delicious recipe from CocoPro ambassador Amie Dawson – another way to enjoy CocoPro Pineapple! This time we are baking with CocoPro, adding a tasty protein punch. Not only is CocoPro high in protein, it also contains your recommended daily intake of vitamin C! These flavoursome little squares also contain fresh pineapple and blueberries, giving them a seriously fruity flavour. But there has to be something slightly naughty in there..so Amie has added white chocolate to her recipe – it’s all about balance.

Give this one a go this weekend or treat yourself to a mid-week baking session!

 

Protein Pineapple Squares (Makes 12-15)

Prep time: 10 minutes

Cooking time: 20 minutes

 

Ingredients

200g Fresh Pineapple- diced

100ml Coconut Oil- melted

1 Carton CocoPro Pineapple

2 Eggs

1 Cup Coconut Sugar

½ Cup Desiccated Coconut

1 ½ Cups Self-raising Flour

¼ Cup Coconut Flour

 

To decorate (optional)

1 Bar White Chocolate- melted

Blueberries

Coconut Flakes

 

Method

Pre-heat the oven to 175 degrees C and grease/line a large brownie tin.

Mix eggs, coconut oil, coconut sugar and CocoPro in a bowl- add pineapple pieces.

Add flours and coconut and mix until it forms a smooth batter.

Pour mixture into the brownie tin and ensure it’s evenly spread out.

Pop in the oven for 17-20 minutes- check with a clean knife to ensure it’s completely cooked- if it comes out clean it’s ready.

Remove from the oven and leave to cool completely.

Optional- Once cool decorate with toppings.

Cut into squares and enjoy!

Store in an airtight container for up to 4 days.
