Protein Pineapple Cake
Prep time: 10 minutes
Cooking time: 30 minutes
280g Plain Flour
3⁄4 Cup Coconut Sugar
1 Tsp. Baking Powder
150g Coconut Oil (melted)
1 CocoPro Pineapple
1 Tsp. Vanilla
Zest 1 Lemon
Pre-heat the oven to 175 degrees C and grease a medium springform cake tin with oil, pop to one side. Combine all dry ingredients in a bowl and set to one side.
In a separate bowl cream coconut sugar and coconut oil together.
Add eggs and beat.
Add CocoPro and vanilla, mix. Now add the dry ingredients and mix until well combined.
Pop in the oven for 25-30 minutes.
Leave to cool completely before serving.
Store in an airtight container for up to 3 days.
