Another delicious bake from CocoPro ambassador #fitnessforster! Continuing to celebrate National Pomegranate Month, Amie has incorporated CocoPro Pomegranate into her recipe as well as additional pomegranate juice (read our recent blog discussing the health benefits of pomegranates). Combined with deliciously tasty coconut, carrot and pistachio flavours, this bake definitely satisfies those sweet cravings.

 

Pomegranate, Pistachio & Carrot Loaf

Serves 10-12
Prep time: 10 minutes
Cook time: 35-40 minutes

Recipe

100g Self-raising Flour
100g Coconut Sugar
1⁄2 CocoPro Pomegranate
1 Tsp. Baking Powder
2 Eggs
40g Grated Carrot
20g Pistachios
2 Tbsp. Pomegranate Juice

Method

Pre-heat oven to 160 degree centigrade and grease a loaf tin; place to one side.
Mix all flour, sugar and baking powder in a bowl.
Add pomegranate juice, eggs and CocoPro and mix together well.
Add grated carrot and pistachios and mix.
Pour mixture into your already greased loaf tin and pop in the oven for 35-40 minutes but keep checking after 25 minutes.
Remove from the oven and leave too cool in the tin for 30 minutes; then remove and leave to cool completely on a cooling rack.

Store in an airtight container in the fridge for up to 5 days or freeze for up to one month.
