Get tropical with this delicious new recipe from CocoPro ambassador Amie Dawson – another way to enjoy CocoPro Pineapple! This time we are baking with CocoPro, which adds a protein punch. Not only does CocoPro add protein, but it also contains your recommended intake of vitamin C! These cute little squares also contain fresh pineapple and blueberries, to give them a delicious fruity flavour. But there has to be something slightly naughty in there, so Amie has added white chocolate to the recipe – it’s all about balance!
Give this one a go this weekend or even treat yourself to a mid-week baking session!
Pineapple Coconut Cake Squares (Makes 12-15)
Prep time: 10 minutes
Cooking time: 20 minutes
200g Fresh Pineapple- diced
100ml Coconut Oil- melted
1 Carton CocoPro Pineapple
1 Cup Coconut Sugar
½ Cup Desiccated Coconut
1 ½ Cups Self-raising Flour
¼ Cup Coconut Flour
To decorate (optional)
1 Bar White Chocolate- melted
Pre-heat the oven to 175 degrees C and grease/line a large brownie tin.
Mix eggs, coconut oil, coconut sugar and CocoPro in a bowl- add pineapple pieces.
Add flours and coconut and mix until it forms a smooth batter.
Pour mixture into the brownie tin and ensure it’s evenly spread out.
Pop in the oven for 17-20 minutes- check with a clean knife to ensure it’s completely cooked- if it comes out clean it’s ready.
Remove from the oven and leave to cool completely.
Optional- Once cool decorate with toppings.
Cut into squares and enjoy!
Store in an airtight container for up to 4 days.
