Little Luxury Foods has created this delicious paleo pancake recipe, topped with a raspberry compote, banana slices and maple syrup. Quick, easy and enjoyable any time of day, these american pancakes are best served with a CocoPro Pomegranate for an additional protein hit!


Paleo Fluffy American Pancakes

Makes 8 pancakes (serves 2)
Prep Time: 5-10 mins
Cook Time: 10 mins



-1 ½ ripe bananas
-3 large eggs
-25g coconut flour
-Pinch of salt
-Coconut oil for frying
-Topping: handful of raspberries, 1 sliced banana and a drizzle of maple syrup



To make the pancakes:

Place the bananas, eggs, coconut flour and salt into a blender and whiz up until you have a smooth batter. The batter should be fairly thick, if it’s really runny then add in (bit by bit) some more coconut flour.

Heat up a large frying pan on a medium heat and add about a teaspoon of coconut oil (melted).

Pour in some of the pancake mix to create about a 3 inch circle and allow to cook for about 2-3 minutes on one side. The batter should start to bubble on the surface. Flip over using a spatula and allow the other side to cook for 2-3 minutes.

Repeat the process until you have a stack of pancakes.

Top with stewed raspberries, sliced banana and a drizzle of maple syrup.
