These hydrating protein popsicles will not only be incredibly refreshing but they will also also give you a protein boost. Did you know coconut water has some incredible health benefits? It restores those electrolytes that may have been lost during your workouts as well as giving you plenty of vitamins and mineral.

Protein Coconut Lime Popsicles
Prep time: 10 minutes
Freeze time: 8 hours or overnight
Makes 8 Popsicles
1 Cup Coconut Milk
2 Tbsp. Maple Syrup
1 Tsp. Vanilla
4 Limes – Juice and Zest
Blend all ingredients in a blender for 30-40 seconds – the mixture will froth quite a bit so leave to sit for 10 minutes after blending to let it settle.
Give the mixture a quick stir and pour into your ice-pop moulds.
Pop in the freezer overnight or for a minimum of 8 hours. Store in the freezer for up to 1 month.
