How to enjoy CocoPro Original in cookie form! Enjoy this mouth-watering protein cookie recipe from our ambassador Amie Dawson. These little cookies are packed with protein, due to the added CocoPro, making them the perfect post-workout high protein snack. Also, using naturally sweetened coconut water and coconut sugar means these protein cookies are totally refined sugar free. Goji berries are brilliant antioxidants, so these protein cookies have some fantastic health benefits! Meanwhile, the peanut butter provides you with those healthy fats that can keep you feeling fuller for longer. At the end of the day, a healthy cookie is what everyone wants!


Goji and Peanut Butter Protein Cookies (Makes 10-12)

Prep time: 10 minutes
Cooking time: 15 minutes



200g Peanut Butter
1 Cup Coconut Sugar
1 Cup Oats
1⁄2 CocoPro Original
40g Goji Berries
1 Tsp. Baking Powder
1 Tsp. Cinnamon



Pre-heat the oven to 175 degrees C and line a large baking tray.
In a medium bowl beat peanut butter, sugar and CocoPro until it forms a smooth mixture.
Add oats, baking powder and cinnamon and mix well.
Add goji berries and mix in well.
Using your hands, make balls of the mixture, pop on the baking tray and press to form a cookie shape- do this until you’ve used all of the mixture.
Bake for 10-15 minutes (check after 10 minutes).
Remove from the oven and leave to cool completely before serving.

Note: the cookies will still be soft to touch when they come out of the oven but this is fine as they will harden as they cool.

Store in an airtight container for up to 3 days.
