Fruity, tasty and high in protein – kick-start your day with these coconut muffins! #FitnessForster has incorporated CocoPro Original into her recipe to create both a delicious and nutritious breakfast. CocoPro protein coconut water has lower sugar than your average juice and also has the bonus of added protein. Combined with banana, blueberries and peaches for your ultimate fruity fix..this is one brekkie/snack you won’t want to share!

Fruity Protein Breakfast Muffins
Makes 18-20 small muffins/10-12 large muffins
Prep time: 15 minutes
Cook time: 15 minutes

200g Wholemeal Flour
80g Oats + extra for sprinkling
1 1⁄2 Tsp. Baking Powder
1 Carton CocoPro Original
2 Tbsp. Maple Syrup
1 Tsp. Vanilla
1 Large Banana (chopped into small pieces)
40g Blueberries
2 Small Peaches (chopped into small cubes)

Pre-heat oven to 180 degrees centigrade and prepare your muffin cases; set to one side.
Mix flour, oats and baking powder in a bowl.
In a separate bowl combine maple syrup, CocoPro and vanilla and mix well.
Pour wet mix over dry ingredients and mix until it forms a smooth batter.
Fold in fruit.
Fill in each bun case 3⁄4 full of mixture and sprinkle on oats.
Bake for 15 minutes.
Remove and leave to cool completely before serving.

Store in an airtight container in the fridge for up to 4 days or freeze for up to one month.
