Little Luxury Foods has created an exclusive, festive smoothie bowl recipe for us using our Original protein coconut water! Deliciously fruity, joyously filling and with a dreamy homemade granola topping, this healthy breakfast suggestion will take some beating this Christmas. With the added benefits of a dose of protein and vitamin c, Lucy’s smoothie bowl really is magical.

Festive protein smoothie bowl & granola

 

Ingredients

Smoothie bowl:
– 1 apple (green)
– 1 pear
– 1cm cube of ginger
– 1/2 carton of CocoPro Original
– couple of cubes of ice (optional)

Granola:
– 150g gluten free oats
– 1 heaped tablespoon coconut oil (melted)
– 2 tablespoons agave
– 50g sunflower seeds
– 50g pumpkin seeds
– 1-2 tsp cinnamon powder

– 100g dried cranberries

 

Method

For the smoothie; peel and chop up the pear, apple and ginger and place into a nutribullet. Add in the CocoPro Original and blend until smooth and frothy.

For the granola; pre-heat your oven to 180 fan. Measure out all the dry ingredients (except the dried cranberries) into a large mixing bowl and mix all together. Melt the coconut oil then add to the dry ingredients and mix in. Then add in the agave nectar and mix again. Line a baking tray with parchment paper then pour the mixture onto the tray and spread out evenly. Bake in the oven for around 8-10 minutes making sure you give it a good mix half way through cooking. Cook until golden brown and slightly crunchy. Allow to cool before serving/storing. Add in the cranberries after (this way they will stay nice and soft and chewy).
