Protein Coconut Lime Popsicles
Prep time: 10 minutes
Freeze time: 8 hours or overnight
Makes 8 Popsicles
1 Cup Coconut Milk
2 Tbsp. Maple Syrup
1 Tsp. Vanilla
4 Limes – Juice and Zest
Blend all ingredients in a blender for 30-40 seconds – the mixture will froth quite a bit so leave to sit for 10 minutes after blending to let it settle.
Give the mixture a quick stir and pour into your ice-pop moulds.
Pop in the freezer overnight or for a minimum of 8 hours. Store in the freezer for up to 1 month.
