Satisfy those sweet Friday cravings with this healthier alternative to the tub of full-fat ice cream that’s currently at the forefront of your mind. Bursting with coconut flavour, Pale Blue Plate‘s Coconut Snowballs recipe is one to bookmark!

 

Ingredients

(Makes 8-10 balls)

100g desiccated coconut

3 tbsp coconut flavoured soya yoghurt

100g dark chocolate

4 tsp honey or maple syrup

 

Method

  1. Mix the yoghurt, desiccated coconut and honey/maple syrup to form a sticky mixture that will allow you to create several small balls (squeezing the mixture whilst sculpting the balls makes it easier). Pop these in the freezer for half an hour to set.
  2. After they have set, remove from the freezer. Melt the chocolate in the microwave for 1-2mins then drop your balls into the melted chocolate to coat them (the messy bit!)
  3. Put them back in the freezer to set. Once the chocolate has hardened, they’re ready to eat..
