Looking for something sweet and delicious, with the added benefit of a protein kick? Amie Dawson‘s Coconut & Pineapple Protein Bars combine our naturally sweetened coconut water with chocolate and almonds to create the ultimate tasty snack.

Very simple to make and good to eat for up to 5 days after, we recommend giving this recipe a go next time you’re on the hunt for an afternoon pick-me-up.

 

Coconut Pineapple Protein Bars

Prep time: 5 minutes

Chill time: 3 hours

(Makes 10-12)

 

Recipe

Base:

1 Cup Oats

½ CocoPro Pineapple

½ Cup White Chocolate Chips

¼ Cup Slivered Almonds

¼ Cup Coconut Flakes

2 Tbsp. Maple Syrup

1 Tbsp. Chia Seeds

1 Tbsp. Flaxseeds

1 Tsp. Vanilla

 

Topping:

1 Bar 75%+ Dark Chocolate

½ Cup Coconut Flakes

 

Method

Starting with the base:

Line a small baking/brownie tray with non-stick paper and place to one side. Mix all dry ingredients in a bowl. Add wet ingredients to the dry ingredients and mix well to form a sticky mixture. Pour the mixture into the baking tray and press down firmly and evenly. Place in the fridge for 30 minutes to harden a little.

Now for your topping:

Simply melt the chocolate for a couple of minutes in the microwave keeping a close eye on it so it doesn’t burn. Pour over the base and spread out evenly. Sprinkle with coconut chips and then pop in the freezer for a couple of hours to set. Remove, cut into bars and serve immediately. Store in an airtight container in the fridge or freezer for up to 5 days.
