With only 7 ingredients and taking just 10 minutes to prepare, these coconut protein balls with lemon are naturally gluten-free and are packed with some serious flavour! Lower in calories than a number of other protein balls on the market, each one contains only 137 calories making them the ideal post workout or afternoon snack!

Coconut & Lemon Protein Balls (makes 9 balls)
Prep time: 10 minutes
Chill time: 1 hour

Recipe
1 3⁄4 Cups Desiccated Coconut
2 Tbsp. Coconut Oil (melted)
3 Tbsp. CocoPro Original
3 Tbsp. Agave Nectar
1⁄2 Tsp. Vanilla
Zest 1 Lemon
Juice 1⁄2 Lemon

Method
Mix all ingredients together in a bowl until they form a crumbly mixture. Don’t worry if it doesn’t appear sticky enough at this point, once you start making the balls it will stick together perfectly.
Roll the mixture into small balls using your hands; it makes around 9-11 balls, depending how big you want them.
Pop in the fridge for one hour to set and harden a little, then enjoy!
Store in an airtight container in the fridge for up to one week.
