Ingredients

For the sauce (serves 3)
2 Tablespoons Quality Peanut Butter
330ml CocoPro Original
1 Stalk Lemongrass – Chopped
1 Whole Red Chilli – Chopped
3 Cloves Garlic – Peeled & Crushed
2 Inches Ginger – Peeled & Chopped
1 Teaspoon Coconut Oil
Juice of 1 lime

For The Stir Fry (Serves 1)
180g Athleat Beef Fillet – Cut In To Strips
50g Fine Rice Noodles – Cooked As Per Instructions
1 Spring Onion – Sliced
1 Red Chilli – Sliced
3 Baby Corn Cobs – Sliced
½ Courgette – Sliced
3 Spears Asparagus – Sliced
2 Teaspoons Coconut Oil
Pinch Fresh Coriander – Chopped

Method

For The Sauce– Fry off the lemongrass, garlic, ginger and chilli gently for 2 minutes in the coconut oil.  Add the coconut water and bring to the boil.  Take off the heat and add the peanut butter.  Once mixed, put the mixture into a blender and blend until smooth.  This will last for 5 days in an air tight container in the fridge once cooled.

For The Stir-Fry– Heat the coconut oil in a wok then add the beef and cook for 1 minute.  Add the vegetables and cook for a further 2 minutes.  Add one portion of the sauce per person and mix in to the stir-fry.  Add in the cooked noodles and mix.

Serve in a bowl and enjoy!  Garnish with chopped coriander to finish.
