These little protein balls of energy are the perfect snack for an afternoon pick-me-up. Combining ground almonds, dates, cinnamon and cacao, Del Lim has created the perfect healthy treat. Enjoy one of our low sugar, protein-packed coconut waters on the side for an added protein boost!

 

Coconut & Almond Energy Balls

Ingredients

100g Crushed / Ground Almonds

200g Pitted Dates

2 Tbsp. Cacao Powder

1 Tsp. Cinnamon

1 Tbsp. Almond Butter

1 Tbsp. Coconut Oil

4 Tbsp. Desiccated Coconut

 

Method

Pulse the dates and coconut oil in a food processor until fully mixed.

Add the almond butter and pulse again.

Mix the cacao powder and cinnamon in a separate bowl. Add the powder mix to the food processor and pulse until thoroughly mixed.

Take a tablespoon (or less if you like them to be bitesized) of the mixture and roll it into a ball.

In a separate bowl, roll the ball in desiccated coconut until it no longer sticks to the ball.

When the mixture is finished, store the balls in the freezer for an hour, then store in the fridge.
