CocoPro ambassador #fitnessforster has successfully got our Christmas taste buds going! Combining some of our favourite festive flavours, Amie has incorporated CocoPro Pomegranate into her recipe for an added protein and vitamin c fix. These delicious protein cupcakes are the perfect afternoon or post-dinner treat!

 

Chocolate & Pomegranate Cupcakes

Makes 8-10 Cupcakes
Prep time: 15 minutes
Cooking time: 20 minutes

 

Recipe

Cupcakes
1 Cup Plain Flour
3⁄4 Cup Coconut Sugar
1/3 Cup Cacao
3⁄4 Tsp. Baking Powder
1⁄4 Cup Coconut Oil (melted)
1 Egg
1⁄2 Cup Hot Water
1⁄4 Cup CocoPro Pomegranate
1⁄2 Tsp. Vanilla

Frosting
1⁄2 Cup CocoPro Pomegranate
1⁄2 Cup Coconut Oil (melted)
100g Low-fat Cream Cheese
1⁄4 Cup Maple Syrup

 

Method

Pre-heat the oven to 175 degrees centigrade and prepare your bun cases.
Mix flour and baking powder in a bowl and pop to one side.
In a separate bowl mix cacao with hot water until it forms a smooth paste; pop to one side.
In another bowl mix sugar with oil then add the egg, vanilla and CocoPro- it will create a smooth and runny mixture. Slowly add both the cacao mix and sugar mix to the dry ingredients and mix until you form a chocolatey batter. Fill your cupcake cases 3⁄4 full with the mixture and bake for 20 minutes or until a knife comes out clean when tested. Leave to cool completely.

Whilst the cakes bake you can make the frosting-
Mix all ingredients in a mixer or using a handheld mixer until well combined. Pop in the fridge for 3-4 hours to harden a little.

Make sure your cupcakes are completely cool before frosting. Store in an airtight container in the fridge for up to 5 days.
