Apple & Coconut Cake
(Serves 10-12)

Cook time: 45 minutes

Recipe
220g Self-raising Flour
170g Coconut Sugar
175g Creamed Coconut
70g Desiccated Coconut
2 Tbsp. Ground Almonds
1 Tsp. Baking Powder
1⁄2 Tsp. Cinnamon
1/2 CocoPro Original
2 Eggs
1 Tsp. Vanilla
2 Apple (diced)

Method

Pre-heat oven to 180 degree centigrade and grease a medium cake tin; place to one side.
Beat creamed coconut, sugar and vanilla until it forms a light and fluffy mixture.

Beat in eggs.

Add all remaining ingredients EXCEPT apples and desiccated coconut and mix well until it creates a smooth and runny batter.

If it’s a little thick just add more CocoPro. Mix in diced apple and desiccated coconut.

Pop in the oven for 45 minutes but keep checking after 35 minutes.

Remove from the oven and leave too cool in the tin for 30 minutes; then remove and leave to cool completely on a cooling rack.

Store in an airtight container in the fridge for up to 5 days or freeze for up to one month.
